AFAIK, the USB keyboard layout is set in the System Settings on the Switch.
However, that will not support all keyboard layouts - only the ones that Nintendo supports.

Please please please! Haven’t used Fuze since i bought it years ago, due to this! Please add support for other layouts than the ones Nintendo are supporting. I am using af danish keyboard

Did you try the suggestion above and set it to German layout?

I think that you can change your keyboard layout into the switch's system settings in the system section, in fact i have setted it to italian and my italian keyboard works perfectly with fuze.
So i think layouts are a matter of the switch's OS rather than fuze
